Hello, I’m Remo Moffa, a retired hospitality professional with five decades of diverse experience in the food service industry. A 1977 graduate of The Culinary Institute of America, I spent the majority of my career as an Executive Chef but also excelled in front-of-house management, including roles as a General Manager for country clubs.

My journey began like many in the industry, working my way through nearly every position imaginable. From dishwasher to prep cook, line cook, busboy, waiter, bartender, and host, this invaluable hands-on experience provided me with a comprehensive understanding of restaurant operations—knowledge that was essential when I moved into leadership roles.

I’ve owned and operated a few restaurants and served as an operations consultant, providing ground-up concept development. This includes crafting custom menus, developing and testing recipes, and establishing inventory and kitchen and front of the house procedures. Along the way there were kitchen designs and re-designs and I spent a couple years working R and D for a food delivery-based start-up.  I’m the author of “Menu Planning Guide for Pros” and retired in 2019. My wife and I currently reside in Weeki Wachee, Florida.
